Egg bhurji
Eating eggs are good for health, it boosts stamina it has high nutritional value. It is rich in vitamin A. Eggs gives you strong hair and good eyesight. Egg bhurji is the most common breakfast.
Ingredients
- Eggs 4
- Onions, finely chopped, 2 medium size
- Tomatoes, chopped, 2
- Green chilies, 1 or 3 as per taste
- Capsicum, chopped (optional)
- Ginger, finely chopped, about 2 inch
- Coriander leaves, chopped 1/2 cup or a small bunch
- Curry leaves, 2 or 3
- Vegetable oil or ghee, 2 Tbsp
- Cumin seeds (Jeera) 1 tsp
- Red Chilli powder 1 tsp or as per taste
- Turmeric Powder, 1/2 tsp
- Pav bhaji masala (optional, use if you have it)
- Salt as per taste
Method
Step 1
Whisk the four eggs gently with a spoon and keep aside.
Step 2
Take a pan, add oil or ghee to it. Now add jeera, onions, hing, green chillies, curry leaves, capsicum and ginger to it. Saute.
Step 3
Add tomatoes and few coriander leaves. Saute for 2 minutes.
Step 4
Add 1 Tbsp butter, pav bhaji masala, red chilli powder, turmeric powder and salt as per taste.
Step 5
Lastly add slightly beaten eggs and keep whisking them until cooked. Remember, Anda Bhurji is typically cooked till the eggs are well done and it is dry.
Step 6
Top it up with butter. Garnish with the rest of coriander leaves.
Step 7
Serve hot with buttered pav or toast or plain paratha.
